1. Roasted Tomatoes
- ¼ cup of drained capers;
- One 2-ounce can of anchovies (finely chopped and drained);
- 2 large shallots;
- ¼ cup of extra virgin olive oil;
- 5 pounds tomatoes-halved, peeled and seeded;
- Freshly grounded peppers;
- Salt according to taste;
Now, preheat the convection oven to 275 degrees. Toss the shallots along with the olive oil and spread it on a parchment sheet. Then, add tomatoes to it and season it with pepper and salt.
Arrange all the tomatoes over the shallots with the cut sides up. Bake the tomatoes inside the oven for 3 hours until they are soft and leathery.

2. Turmeric Roasted Cauliflower
- ¼ cup of chopped cilantro;
- 4 kumquats, chopped and seeded;
- 1 teaspoon of coriander seeds;
- ½ teaspoon of white peppercorns;
- 1 tablespoon of minced garlic;
- 2 tablespoon of grounded turmeric;
- ½ tablespoon of red chili flakes;
- One large 3 pounds of cauliflower, chopped;
- Salt according to taste;
This is one of the easiest recipes for the cauliflower lovers out there. Preheat your convection oven to 400 degrees. In a small skillet toast the peppercorns as well as the coriander seeds until they are fragrant.
Grind all the spices together and transfer it to a small bowl. Then, mix the olive oil, turmeric, and chili flakes.

- 2 tablespoons of red chili powder;

- 1 tablespoon of ground cumin;
- 1 cup of sunflower oil;
- Sea salt;
Preheat the oven to 425 degrees. Add red pepper, turmeric, cumin, sea salt and the olive oil in a bowl. Then, on the baking sheet, lay down the cauliflower and coat it with the mixture.
Then bake it for around 1 hour until they are tender and brown. Meanwhile, bake the pine nuts. Mix the roasted cauliflower and the pine nuts along with the mint and cilantro. You can have this cold or hot.
4. Roasted Butternut and Carrot
- Eight square sheets of pasta;
- 24small sage leaves;
- 1 tablespoon of unsalted butter;
- 1 cup chicken stock;
- ½ pound of mushroom, sliced;
- 6 tablespoon of Parmesan;
- 2 tablespoon of olive oil;
- 4 garlic cloves;
- 3 large carrots;
- 3/4pound peeled butternut squash;
- Salt according to taste;
Preheat the oven to around 400 degrees. Now, on a baking sheet, toss the chopped carrot and squash with garlic and olive oil.
Then season it with the pepper and salt. Roast the vegetable for 20 minutes.
Then, turn the heat to 350 degrees. Now, transfer the cloves of garlic to a bowl and mash them. Add parmesan to it.
Then season with pepper and salt. Now cook the mushroom with on the chicken stock.
Add all the things together along with the butter. Roast it for 2 minutes inside the oven. Sprinkle some salt, and your food is ready.
- Brownie mix;
This is by far the best and easiest recipe of all. This will give you great dessert for your after-dinner craving. Preheat the oven to 400 degrees. Now add the egg whites and the brownie mix together.
Butter the pan and add the brownie mix to it. Now, place the brownie mix in the pan. Put it inside the oven and wait for 30 to 45 minutes.
Now, full out some vanilla ice cream from your fridge and serve it with vanilla ice cream topped with some nuts.
6. Oven Style Barbecued Chicken
- 2 tablespoons of vegetable oil;
- 1 tablespoon of chili powder;
- 1 tablespoon of paprika;
- ½ tablespoon of dry mustard;
- ½ tablespoon of ground ginger;
- 2 kg of chicken- you can go for the breast, thighs, legs etc;
- Salt and pepper to taste;
- Barbecue sauce;
In a large bowl mix all the ingredients together. Marinate the chicken in the mixture for a couple of hours inside the fridge. Place the marinated chicken in a baking sheet.

300g fresh raspberries;
30 ml orange juice;
100 g of granulated sugar;
Cut all the fruits into nice and fine cubes. Now preheat the oven to 220 degree Celsius. Places the plums and peaches on the baking sheet. Cover the fruits with sugar then add raspberries to it.
Now, bake this for 20 to 25 minutes straight. Now, grill the fruit for 5 minutes at best. Add orange juice to the mixture and you are good to go.
8. Oven Roasted Potatoes
- Potatoes scrubbed clean
- Garlic Cloves
- 2 large shallots quartered and peeled
- Olive oil
Heat the oven to 190 degree Celsius. Cut the potatoes into quarters or halves. Place all the pieces of the potatoes along with the garlic cloves on a baking sheet.
Then add shallot quarters and thyme, rosemary on it. Season it well with pepper and salt. Now, drizzle a little bit of olive oil on it. Toss all the items to combine it finely.
Place the potatoes along with the garlic in the oven for 30 to 40 minutes. Remove the thyme and rosemary and serve on the table.
9. Oven Baked Salmon
- Salmon cut into 4 pieces;
- Baked squash;
- Toasted almond parsley salsa;
Preheat the oven to around 450 degree Fahrenheit. Season the salmon with pepper and salt. Lay the salmon pieces on the non-stick pan.
